Jacket Potatos

Acquire a large potato or two, depending on how hungry you are. Wash them, prick them all over with a fork, and dampen again.

Roll the potato in seasoning, such as freshly milled seasalt and black pepper (as an alternative you may like to try a dusting of curry powder, mustard, or paprika to give it some bite). Then put them in the oven at 180-200c and let it cook for about 45mins to an hour and a half, depending on the size of the potato. (oven performance may vary, so check occasionally for burning).

When it has cooked, cut the potato in half and scoop out the filling, and mash it up, mixing in a knob of butter and some grated mature cheddar. Put the filling back into the jacket and grill to brown off the potato.

Great as a snack or a meal, serve with some cold meat, salad, and a glass of beer, or a hot beverage.
