Barbecue chicken
For 4
4 chicken breasts, cut in chunks
Bay leaves (optional)
Barbecue sauce
1 tbsp sunflower oil
1 medium onion, chopped
1 clove garlic, chopped
Some grated peeled ginger, or 3 pinches of dried ginger
2 tbsps Worcestershire sauce
3 tbsps tomato ketchup
11⁄2 tbsps malt vinegar
1 tbsp orange juice
11⁄2 tbsps soft brown sugar
Method:
1 Heat oil in small pan. Add onion and garlic. Cook on low heat for 3 minutes without colouring. Add other sauce ingredients and boil. Simmer for 3 minutes. Blend it with a hand blender or blender.
2 Place chicken into a bowl with two-thirds sauce. Turn to coat and leave for 5 minutes.
3 Thread the chicken on 4 skewers. Alternate with bayleaves if you like. (Preheat grill to a maximum if indoors.)
4 Lay the skewers over a hot barbecue (or grillpan). Turn frequently for 10 minutes or until the chicken is white all through but still moist and tender. Test with a knife.
5 Meantime, use the remaining sauce in the pan and heat with a bit of extra orange juice to thin. Drizzle over the kebabs when ready to serve.

Granny Smiths coffee cake

Ingredients:
1 package (8 oz.) cream cheese softened
1-1/2 cups sugar, divided
1/3 cup butter or margarine
2 eggs
1 teaspoon almond extract
Flour (see below for amounts)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup milk
4 cups Granny Smith apples, pared, cored and sliced
2 tablespoons lemon juice
1 teaspoon ground cinnamon
Method:
1.) Combine cream cheese, 1 cup sugar, butter, eggs, and almond extract; mix well. Combine 1-3/4 cups flour, baking powder, baking soda and salt; blend into cheese mixture alternately with milk. Pour into greased and floured 9 X 13 X 2-inch baking pan. Dip apples into lemon juice; toss with 2 tablespoons flour, 1/2 cup sugar and cinnamon. Arrange apples slices on coffeecake. Bake at 350 degrees F. 50-60 minutes or until wooden pick inserted near center comes out clean. Cool slightly; serve warm.
